Fish sauce (Southeast Asian)
GoodSubstitute: Soy sauce + tiny amount of lime juice and salt
Fish sauce adds fermented depth that soy approximates but doesn't fully replicate. Use 3/4 quantity of soy.
Kaffir lime leaves (Thai)
AcceptableSubstitute: Lime zest (1 leaf ≈ 1/4 tsp zest)
Lime zest gives citrus hit but lacks the complex aromatic quality. Frozen kaffir leaves are far superior to dried.
Tamarind paste (Indian/Thai)
AcceptableSubstitute: Equal parts lime juice + brown sugar
Lacks tamarind's unique fruity-sour complexity but works in most recipes. Worth finding real tamarind paste.
Miso paste (Japanese)
PoorSubstitute: Soy sauce with a small amount of tahini
Miso's fermented umami depth is nearly irreplaceable. It keeps for months — worth ordering online.
Dried ancho chilli (Mexican)

Regular butter contains milk solids that burn at high heat. Clarify it by melting and skimming or use European-style butter.
Shaoxing rice wine (Chinese)
Very goodSubstitute: Dry sherry (closest), mirin (slightly sweeter)
Dry sherry is an excellent substitute at a fraction of the cost. Avoid 'cooking sherry' which has added salt.
